13 Best Pegan Breakfast Recipes

I’ve been wanting to share my favorite Pegan breakfast recipes with you! I have finally narrowed it down to the 17 best recipes. As many of you know, breakfast is my favorite meal of the day. I never skip breakfast, even it means leaving the house a few minutes late… Check them out and let me know what you think!

 

1. Pesto + Roasted Tomato Omelet

Don’t be fooled- this simple omelet is robust in flavor. With roasted tomatoes and pistachio pesto, this is satisfying yet healthy!

2. Breakfast Burrito Bowl with Sweet Potato Noodles

I use my veggie spiralizer every chance I get! Sweet potato noodles for breakfast? I think so!

3. Almond Matcha Superfood Smoothie

I love starting my day with Matcha. It is loaded with antioxidants and gives you a nice energy boost.

5. Pegan Chia Seed Pudding

As dairy yogurt parfaits are out of the question on the Pegan diet, chia seed pudding is a great replacement! I love topping the pudding with Paleo Krunch granola and unsweetened coconut flakes.

This is a quick, go-to breakfast that takes less than 5 minutes. Top it with fruit, nuts and a drizzle of 100% maple syrup.

This frittata combines spinach, mushrooms and asparagus.  A simple dish that works great reheated the next day.

    The first recipe has eggs, how is that pegan? Pegan = vegan and paleo

      I also see a recipe for Pegan salmon below… salmon is vegan? I did not realize fish were plants…

    You do realize that vegans don’t eat eggs, right? (Or dairy, or meat, or honey since you seem to be unsure of what a vegan eats)
