Maple toasted quinoa has become one of my staple items… and I don’t let just any food become a staple. Not only does it add a great crunch to yogurt, it is packed with protein and stomach-filling fiber.
This is my favorite way to prepare quinoa. You might just become addicted.
Maple Toasted Quinoa (PALEO/VEGAN)
Yields 4 servings // Prep time 5 minutes // Cook Time 10 minutes
- 1 cup quinoa, rinsed
- 1 Tbsp pure maple syrup
- 1 Tbsp canola oil
Serve with Greek yogurt and fresh fruit
1. Preheat oven to 375 degrees. Mix quinoa with syrup and oil and spread evenly on a rimmed baking sheet. Bake until crisp and golden brown. Stir occasionally to evenly brown the quinoa. This takes about 10 minutes.
2. Transfer to a plate and let cool to room temperture. Store in air tight container at room temperature for no more than one month.
3. Sprinkle 2 teaspoons over 1/2 cup plain Greek yogurt and fresh berries.
